Ingredients

- 2 ½ cups cold, cooked shredded chicken (leftovers or rotisserie)
- ¾ cup fresh mint, roughly chopped
- ¾ cup shredded carrots
- ½ red onion, thinly sliced
- ½ cup fresh cilantro, roughly chopped

For the Nuoc Cham Dressing:
- ¼ cup fresh lime juice
- ¼ cup water
- 3 tablespoons honey
- 2 tablespoons fish sauce
- 1 teaspoon chili garlic sauce
Instructions
- Prepare the Salad Ingredients – In a large bowl, combine shredded Napa cabbage, shredded chicken, mint, carrots, red onion, and cilantro.
- Make the Dressing – In a small bowl, whisk together lime juice, water, honey, fish sauce, and chili garlic sauce until well combined.
- Assemble the Salad – Pour the dressing over the salad and toss until everything is evenly coated.
- Garnish & Serve – Sprinkle chopped roasted peanuts (or cashews) on top before serving.
