Ingredients

  • 2 pounds (about 900 grams) potatoes (such as Russets or Yukon Gold)

  • 1 cup (125 grams) all-purpose flour

  • ½ teaspoon salt

  • 3 tablespoons (45 grams) unsalted butter, melted

  • Additional butter for frying

Directions

  1. Prepare the Potatoes: Peel and cut the potatoes into equal-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15 minutes. Drain and return the potatoes to the pot. Allow them to steam dry for a couple of minutes.

  2. Mash the Potatoes: Mash the potatoes until smooth. For a fluffier texture, you can use a potato ricer.

  3. Make the Dough: Add the melted butter to the mashed potatoes and mix
