Zuppa Toscana is a hearty, comforting Italian soup with a rich and creamy broth, spicy sausage, tender potatoes, and fresh greens. It’s the ultimate dish for cold weather or whenever you need something satisfying and flavorful.

Ingredients

1 lb Italian sausage (mild or spicy, depending on preference)

1 medium onion, diced

3 cloves garlic, minced

4 large russet potatoes, thinly sliced

6 cups chicken broth

1 bunch kale, chopped (remove stems)

1 cup heavy cream

1/2 teaspoon red pepper flakes (optional, for extra heat)

Salt and pepper, to taste

Olive oil (for sautéing)

Instructions

  1. In a large pot or Dutch oven, heat a little olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and fully cooked through. Remove the sausage from the pot and set aside.
  2. In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3 minutes.
  3. Add the sliced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
  4. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 15-20 minutes, or until the potatoes are tender.
  5. Return the cooked sausage to the pot and stir in the chopped kale. Let the soup simmer for an additional 5 minutes, until the kale has softened.
  6. Reduce the heat to low and stir in the heavy cream. Season with salt, pepper, and red pepper flakes (if using). Simmer for another 5 minutes, allowing the flavors to meld together.
  7. Serve hot, and enjoy!
