This quick and easy recipe is perfect for pairing with meats, fish, or even as a spread. With minimal prep time and nutritious ingredients, it's a must-try dish for any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 (16-ounce) package frozen peas
  • 1 bunch green onions, chopped
  • 1 bunch fresh mint leaves, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • Salt and pepper to taste

Instructions

  1. Cook the Peas: Heat olive oil in a large skillet over medium heat. Add frozen peas, chopped green onions, and chopped mint leaves. Cook, stirring occasionally, until peas are hot and tender but still bright green, approximately 7 to 10 minutes.
  2. Mash the Mixture: Transfer the cooked peas mixture to a bowl. Using a masher or the back of a spoon, mash until the peas are crushed but still slightly chunky.
  3. Add Seasonings: Stir in unsalted butter and brown sugar until the butter melts and the sugar dissolves. Season with salt and pepper to taste.
  4. Serve: Serve warm as a side dish or spread.

Notes

  • For a creamier texture: Add 1/4 cup of heavy cream while mashing.
  • For added spice: Sprinkle red pepper flakes or cayenne pepper.
  • For a citrusy touch: Mix in a teaspoon of lemon zest.
  • To store: Keep in an airtight container in the refrigerator for up to 2 days or freeze for up to 3 months.
  • Reheat gently: Warm on the stovetop over low heat, adding a bit of butter or water if needed.
