Instructions
Prepare Cereal Treats:
- Line a 10-inch round cake pan with plastic wrap and lightly coat with cooking spray.
- In a large stockpot, melt the butter over low heat. Add the marshmallows and stir until melted.
- Mix in the Lucky Charms cereal and press the mixture into the prepared pan. Refrigerate for 2 hours until solid.
Bake the Cake:
- Preheat the oven to 350°F and prepare two 8-inch round cake pans by spraying them with cooking spray and lightly flouring them.
- In a large bowl, combine the cake mix, water, oil, and eggs. Beat on low speed until smooth, then beat on medium speed to ensure there are no streaks.
Color the Batter:
- Divide the batter into six bowls, adding a different food coloring to each one.
- Layer the colored batters in the prepared pans, creating a rainbow effect.
Bake and Cool:
- Bake the cakes according to the instructions on the cake mix box. Let them cool for 10 minutes before removing from pans.
Assemble the Cake:
- Stack the cooled cake layers, spreading frosting between each layer.
- Top the cake with the prepared Lucky Charms cereal treats.
- Use chocolate icing and pretzel sticks to create the "leprechaun hat" shape.
Notes
- For added sparkle, you can sprinkle green edible glitter or sprinkles on top.
- You can switch up the flavor by using different cereals.
