Kolaczki are a beloved Polish pastry, often made for holidays like Christmas, but perfect for any occasion. These delicate, flaky cookies are filled with your choice of flavorful jam—raspberry, apricot, or even lemon curd—and are topped with a light dusting of powdered sugar. With simple ingredients and an easy-to-follow process, these cookies are a hit at any gathering. Ingredients

1 cup unsalted butter (softened to room temperature)

8 oz cream cheese (softened, full fat)

1 tsp almond extract (or other extracts of choice)

¼ tsp salt

2 cups all-purpose flour

½ cup jam (such as raspberry, apricot, or lemon curd)

Water (to seal dough)

Powdered sugar (for dusting)

Instructions

  • Prepare the Dough: Cream together butter and cream cheese until smooth. Add salt and flour in three additions, mixing well after each. Shape dough into a ball, flatten it, wrap it in plastic, and chill for 1 hour.

  • Roll the Dough: Roll chilled dough on a surface dusted with powdered sugar to ¼ inch thickness. Trim edges and cut dough into 2 ½ inch squares.

  • Fill and Shape the Cookies: Preheat oven to 350°F. Place a spoonful of jam in the center of each square. Fold corners over the jam, sealing with a little water, and pinch edges together to form a pocket.

  • Bake: Arrange cookies on a baking sheet and bake for 10-12 minutes, or until edges are lightly golden.

  • Cool and Dust: Cool on a wire rack and dust with powdered sugar before serving.
