Coney Chili Mac Casserole combines the bold flavors of chili with the heartiness of macaroni and cheese. With layers of pasta, chili, and a cheesy topping, this dish is perfect for family dinners or potlucks.

Ingredients

1 lb elbow macaroni

1 lb ground beef

1 medium onion, chopped

1 can (15 oz) chili beans, undrained

1 can (15 oz) tomato sauce

1 packet chili seasoning mix

1/2 cup water

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream

Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish and set aside.
  2. Cook the elbow macaroni according to the package instructions. Drain and set aside.
  3. In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
  4. Stir in the chili beans, tomato sauce, chili seasoning mix, and water. Simmer the mixture for about 10 minutes, allowing the flavors to meld together.
  5. Add the cooked macaroni to the skillet and stir to combine with the chili mixture.
  6. Transfer the mixture to the prepared casserole dish. Top with sour cream and shredded cheddar cheese.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  8. Serve hot and enjoy!

Notes

  • You can add veggies like bell peppers, corn, or diced tomatoes for extra flavor.
  • For a spicier version, add jalapeños or use a spicy chili seasoning mix.
  • Feel free to use a blend of cheeses like mozzarella or Monterey Jack for a different flavor.
  • To make this vegetarian, swap the ground beef for a plant-based meat substitute or extra beans.
