This vibrant and refreshing salad combines the sweetness of strawberries, the crunch of almonds, and the tangy brightness of champagne vinaigrette. Perfect for a light lunch or as a side dish.

Ingredients

4 cups mixed salad greens (such as spinach or arugula)

1 ½ cups strawberries, hulled and sliced

½ cup sliced almonds, toasted

¼ cup crumbled feta cheese (optional)

2 tbsp fresh basil, finely chopped

For the Champagne Vinaigrette:

2 tbsp champagne vinegar

1 tsp Dijon mustard

1 tsp honey or maple syrup

½ cup olive oil

Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the mixed salad greens, sliced strawberries, and toasted almonds.
  2. In a small bowl or jar, whisk together the champagne vinegar, Dijon mustard, honey, olive oil, salt, and pepper until the dressing is well-emulsified.
  3. Drizzle the champagne vinaigrette over the salad and toss gently to coat.
  4. Sprinkle the crumbled feta cheese and chopped fresh basil over the top for added flavor.
  5. Serve immediately, or chill for 10-15 minutes in the refrigerator for a cooler, more refreshing experience.
