These Strawberry Crunch Bites are a delightful, no-bake dessert that perfectly blends fresh, fruity flavors with creamy filling and a satisfying crunch. The strawberry layer, cream cheese filling, and crunchy coating make them a hit for any occasion.

Ingredients

1 cup fresh strawberries, finely chopped

1 tbsp granulated sugar

1 tsp lemon juice

8 oz cream cheese, softened

¼ cup powdered sugar

½ tsp vanilla extract

1 cup freeze-dried strawberries

1 cup Golden Oreos or vanilla cookies

2 tbsp melted butter

Whipped cream (optional topping)

Extra chopped strawberries (optional topping)

Instructions

  1. In a small bowl, combine chopped strawberries, sugar, and lemon juice. Let sit for 10–15 minutes until juicy. Drain any excess liquid and set the strawberry mixture aside.
  2. In a medium-sized bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the drained strawberry pieces, ensuring they are evenly distributed throughout the filling.
  3. Scoop heaping teaspoons of the strawberry cream cheese mixture and roll them into small balls. Place them on a lined tray, then freeze for about 30 minutes to firm up.
  4. In a food processor, pulse freeze-dried strawberries and Golden Oreos (or vanilla cookies) until they form fine crumbs. Stir in the melted butter until the mixture resembles coarse sand.
  5. Roll each chilled cream cheese ball in the strawberry crunch mixture, gently pressing the crumbs to adhere. Return the coated bites to the tray and refrigerate for another 15–20 minutes to set.
  6. Once the bites are fully set, top them with whipped cream or additional fresh chopped strawberries, if desired. Serve and enjoy.

Notes

  • Store the bites in an airtight container in the refrigerator for up to 4–5 days.
  • The bites can be frozen for up to a month. Let them thaw in the fridge before serving.
