These Sausage, Egg, and Cheese Breakfast Roll-Ups are a quick, customizable, and delicious breakfast option. Packed with savory sausage, scrambled eggs, and melted cheddar cheese wrapped in a warm tortilla, they are perfect for busy mornings.

Ingredients

1 lb breakfast sausage

6 large eggs

1/4 cup milk

Salt and pepper to taste

1 cup shredded cheddar cheese

1 tablespoon butter

4 large flour tortillas

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and fully cooked. Remove and set aside.
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. In the same skillet, melt butter over medium heat. Pour in the egg mixture and scramble gently until fully cooked.
  4. Lay out the flour tortillas on a flat surface.
  5. Evenly distribute the cooked sausage, scrambled eggs, and shredded cheddar cheese among the tortillas.
  6. Roll up each tortilla tightly, folding in the sides to enclose the filling.
  7. Place the roll-ups seam side down in the skillet over medium heat.
  8. Cook 2-3 minutes per side until tortillas are golden brown and cheese is melted.
