Ingredients

1 cup rhubarb, diced and cooked

1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter

1/4 cup honey or maple syrup

1/4 cup chia seeds

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

  1. In a saucepan, simmer the diced rhubarb with a splash of water over medium heat for about 5-7 minutes, or until soft. Allow it to cool slightly.
  2. In a mixing bowl, combine the cooked rhubarb with rolled oats, shredded coconut, almond butter, honey or maple syrup, chia seeds, vanilla extract, and salt.

  5. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Once set, store the energy balls in an airtight container in the refrigerator for up to one week.
