Pasta salad is a versatile and flavorful dish that combines pasta with fresh vegetables, a tangy dressing, and savory ingredients, making it perfect for potlucks, BBQs, or quick weeknight dinners.

Ingredients

8 oz (about 2 cups) cooked pasta (such as rotini or bowtie)

1 cup cherry tomatoes, halved

1/2 cup diced cucumber

1/4 cup red onion, finely chopped

1/4 cup bell pepper, diced

1/2 cup black olives, sliced

1/4 cup shredded cheese (optional)

1/4 cup fresh parsley or basil, chopped (optional)

1/4 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp dried oregano

Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, drain, and rinse with cold water to cool.
  2. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, red onion, bell pepper, and black olives.
  3. In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, oregano, salt, and pepper until the dressing is smooth and emulsified.
  4. Pour the dressing over the pasta and vegetables, tossing gently to coat everything evenly.
  5. If desired, sprinkle shredded cheese and fresh herbs over the top.
  6. Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

Notes

  • Pasta salad can be made ahead of time, and the flavors will improve after a few hours or even the next day.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
