Ingredients

6 cups Rice Krispies cereal

1/4 cup butter

1 package (10 oz) mini marshmallows

1/4 cup fresh lemon juice

1 tablespoon lemon zest

1/2 teaspoon vanilla extract

Instructions

  1. In a large saucepan, melt the butter over medium heat.
  2. Once the butter has melted, add the marshmallows and stir until completely melted and smooth.
  3. Stir in the lemon juice, lemon zest, and vanilla extract until fully combined.
  4. Remove from heat and add the Rice Krispies cereal. Stir gently until the cereal is evenly coated with the marshmallow mixture.
  5. Press the mixture into a greased 9x13-inch baking dish. Use a piece of wax paper or your hands to press it down evenly.
  6. Let the treats cool at room temperature for about 30 minutes before cutting them into squares or rectangles.
