Key Lime Pie Lush is a refreshing, no-bake dessert that layers a buttery graham cracker crust with a tangy key lime filling and a light, fluffy whipped topping. This easy-to-make treat is perfect for summer gatherings or any occasion that calls for a cool, citrusy delight.

Ingredients

2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter, melted

8 ounces cream cheese, softened

1 cup powdered sugar

2 teaspoons vanilla extract

2 cups whipped topping (such as Cool Whip), thawed

3 tablespoons lime-flavored gelatin mix

1/2 cup boiling water

1 package (3.4 ounces) instant white chocolate pudding mix

1 cup half-and-half

1/2 cup key lime juice

1 tablespoon key lime zest

1 1/2 cups whipped topping, thawed

2 cups whipped topping, thawed (for topping)

Additional key lime zest and graham cracker crumbs for garnish (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs and granulated sugar. Add melted butter and mix until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a 9x13-inch baking dish. Refrigerate while preparing the next layer.
  3. In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; beat until well combined.
  4. Fold in 2 cups of whipped topping until fully incorporated. Spread this mixture evenly over the chilled crust.
  5. In a small bowl, dissolve lime-flavored gelatin mix in boiling water; set aside to cool slightly.
  6. In another bowl, whisk together instant pudding mix and half-and-half until smooth. Add key lime juice and zest; mix well.
  7. Gradually stir in the dissolved gelatin mixture until fully combined. Fold in 1 1/2 cups of whipped topping.
  8. Spread this layer evenly over the cream cheese layer.
  9. Spread 2 cups of whipped topping over the key lime layer. Garnish with additional lime zest and graham cracker crumbs if desired.
  10. Cover and refrigerate the dessert for at least 6 hours, or overnight, to allow the layers to set.
