Soft and chewy homemade oatmeal cream pies with a sweet, creamy filling, offering a nostalgic twist on a classic treat.

Ingredients

1 cup unsalted butter, softened

1 cup packed light brown sugar

½ cup granulated sugar

2 large eggs

1½ teaspoons pure vanilla extract

1½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

3 cups old-fashioned rolled oats

1½ cups mini chocolate chips (optional)

For the filling:

1 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon pure vanilla extract

2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Whisk together the flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Stir in the oats and chocolate chips (if using).
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are golden brown.
  9. Cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  10. For the filling, beat together the butter, powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
  11. Assemble the pies by spreading a generous amount of filling onto the flat side of one cookie and sandwiching it with another.
