Ingredients

2 cups cooked chicken, shredded (rotisserie works great!)

1 (10.5 oz) can cream of chicken soup

1 (8 oz) container sour cream

1 (16 oz) bag frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 sleeve Ritz crackers, crushed (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, and frozen mixed vegetables. Stir until well mixed.
  3. Transfer the mixture into a greased 9x13-inch baking dish.
  4. Top the casserole with shredded cheddar cheese, spreading it evenly over the surface.
  5. If using, sprinkle the crushed Ritz crackers over the cheese layer for added crunch.
  6. Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Let it rest for a few minutes before serving.
