This air fryer chicken parmesan is a healthier twist on the classic dish, offering crispy, juicy chicken with melty mozzarella and tangy tomato sauce. Made with minimal oil and cooked to perfection in just 20 minutes.

Ingredients

2 (6 oz) chicken breasts, cut into cutlets or store-bought cutlets

2 cups seasoned panko breadcrumbs

½ cup grated parmesan cheese

1 tablespoon Italian seasoning

1 teaspoon granulated garlic

1 teaspoon chili powder

¼ teaspoon kosher salt

¼ teaspoon ground black pepper

23 large eggs

Olive oil cooking spray

1 cup tomato sauce

1 cup shredded mozzarella cheese

Chopped basil and parsley for topping

Instructions

  1. Preheat the air fryer to 390°F.
  2. Create a dredging station: combine breadcrumbs, parmesan, Italian seasoning, garlic, chili powder, salt, and pepper in a shallow bowl. In another bowl, whisk the eggs with a pinch of salt and pepper.
  3. Pat the chicken dry. Dip each cutlet into the egg, then coat in the breadcrumb mixture, pressing to adhere. Place on a clean plate.
  4. Spray the air fryer basket with olive oil spray. Arrange chicken in a single layer. Spray tops with oil and air fry for 5 minutes.
  5. Flip, spray again, and cook for 5 more minutes.
  6. Add tomato sauce and shredded mozzarella on top of each piece, then air fry for 2 more minutes until the cheese is melted.
  7. Let rest for 5 minutes. Garnish with basil and parsley and serve.

Notes

  • Use gluten-free breadcrumbs to make it gluten-friendly.
  • Swap mozzarella with provolone or dairy-free cheese if preferred.
  • For added spice, include red pepper flakes in the breadcrumb mix.
