These brownies are everything you love about boxed mix brownies, but better. Made with simple ingredients like cocoa powder and brown sugar, they’re perfectly fudgy, chewy, and full of rich chocolate flavor.

Ingredients

1 cup butter, melted

1 cup brown sugar (light or dark)

2 large eggs

1 tablespoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon salt

1 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together the melted butter, brown sugar, and vanilla extract until well-combined.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Stir in the flour, cocoa powder, and salt until just combined. Be careful not to overmix.
  5. Gently fold in the mini chocolate chips.
  6. Pour the brownie batter into the prepared pan, spreading it out evenly.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out with fudgy crumbs attached.
  8. Let the brownies cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely. Cut into squares and serve.

Notes

  • Feel free to stir in chopped nuts, marshmallows, or extra chocolate chips to customize your brownies.
  • Use Dutch-process cocoa powder for a deeper chocolate taste.
  • For a vegan version, swap the eggs with a flaxseed mixture or a vegan egg substitute, and use dairy-free butter and chocolate chips.
  • Store brownies in an airtight container at room temperature for 2-3 days, or in the fridge for up to 4-5 days to maintain a chewier texture.
  • To reheat, microwave for a few seconds until warm or place in the oven for 5 minutes at 300°F.
