Ingredients

Chicken breasts or thighs, cut into 1-inch cubes

Olive oil

Garlic powder

Paprika

Salt

Black pepper

Mayonnaise

Thai sweet chili sauce

Sriracha

Honey

Lime juice

Wooden or metal skewers

Instructions

  1. In a large bowl, combine the chicken cubes with olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat evenly.
  2. In a separate bowl, mix mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth. Reserve half of the sauce for later use.
  3. Thread the seasoned chicken pieces onto the skewers, leaving a bit of space between each piece.
  4. Cooking options:
    • Air Fryer: Preheat the air fryer to 400°F (200°C). Place the skewers in a single layer and cook for 10-12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
    • Grill: Preheat the grill to medium-high heat. Grill the skewers for 8-10 minutes per side, basting with the reserved sauce during the last few minutes, until the chicken is cooked through.
    • Oven: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper and bake for 20-25 minutes, flipping halfway through. Brush with the reserved sauce during the last 5 minutes of cooking.
  5. Once cooked, drizzle the remaining bang bang sauce over the skewers and serve immediately.

Notes

  • Protein Alternatives: Substitute chicken with shrimp, tofu, or beef cubes for a different take.
  • Vegetarian Option: Use firm tofu or cauliflower florets instead of chicken.
  • Spice Level: Adjust the amount of sriracha to control the heat. For a milder sauce, reduce the sriracha or omit it entirely.
  • Sauce Base: Replace mayonnaise with Greek yogurt for a lighter version of the sauce.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Microwave, oven, or air fryer options are available to reheat the skewers.
