Ingredients

1 lb large shrimp, peeled and deveined

2 cups cooked jasmine rice

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Instructions

  1. In a bowl, combine shrimp with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat.
  2. Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes on each side, or until pink and opaque. Remove from heat.
  3. In a large bowl, combine cooked jasmine rice, diced avocado, cherry tomatoes, red onion, and cilantro.
  4. Drizzle with lime juice and toss gently to combine.
  5. Serve the rice mixture in bowls topped with the cooked shrimp. Garnish with additional cilantro and lime wedges if desired.
