These White Chocolate Strawberry Cheesecake Bites are a delightful, no-bake treat perfect for satisfying your sweet tooth with minimal effort. Combining creamy cheesecake, smooth white chocolate, and fresh strawberries on a graham cracker crust, these bites are perfect for parties or as a quick snack.

Ingredients

  • 1 cup crushed graham crackers
  • 3 tablespoons unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup white chocolate chips, melted
  • 1/2 cup fresh strawberries, finely chopped
  • Extra strawberries and white chocolate chips for garnish

Instructions

  1. Prepare the crust: In a mixing bowl, combine crushed graham crackers and melted butter until the mixture resembles wet sand. Press into the bottom of a silicone mini muffin pan to form the base.
  2. Prepare the filling: In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Fold in the melted white chocolate and mix until combined. Stir in the finely chopped strawberries.
  3. Assemble: Spoon the cream cheese mixture over the graham cracker bases, filling each cup to the top.
  4. Chill: Refrigerate for at least 2 hours or until set.
  5. Garnish & serve: Once set, gently remove the cheesecake bites from the silicone pan. Garnish with a small piece of strawberry and a drizzle of melted white chocolate.
