  • 2 1/2 cups cold, cooked shredded chicken (leftovers or rotisserie)
  • 3/4 cup fresh mint, roughly chopped
  • 3/4 cup shredded carrots
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh cilantro, roughly chopped
  • 1/2 cup chopped roasted peanuts (or cashews for a paleo-friendly option)

For the Nuoc Cham Dressing:

  • 1/4 cup fresh lime juice
  • 1/4 cup water
  • 3 tablespoons honey
  • 2 tablespoons fish sauce
  • 1 teaspoon chili garlic sauce

Instructions

  • Prepare the Salad Ingredients – In a large bowl, combine shredded Napa cabbage, shredded chicken, mint, carrots, red onion, and cilantro.
  • Make the Dressing – In a small bowl, whisk together lime juice, water, honey, fish sauce, and chili garlic sauce until well combined.
  • Assemble the Salad – Pour the dressing over the salad and toss until everything is evenly coated.
  • Garnish & Serve – Sprinkle chopped roasted peanuts (or cashews) on top before serving.

Notes

  • To keep the salad fresh, store the dressing separately and toss before serving.
  • Add extra chili garlic sauce for more heat.
  • Use tofu or mushrooms for a vegetarian version.
