Ingredients

1 lb ground beef

1 package (12 oz) rigatoni pasta

1 can (10 oz) diced tomatoes with green chilies

1 package (8 oz) Velveeta cheese, cut into cubes

1 small onion, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1/2 cup shredded mozzarella cheese (optional, for topping)

Instructions

  1. Cook the rigatoni pasta according to the package directions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  3. Add the chopped onion and minced garlic to the skillet with the beef, cooking until softened and fragrant, about 3-4 minutes.
  4. Stir in the diced tomatoes with green chilies, dried oregano, and basil. Season with salt and pepper to taste. Let this mixture simmer for 5 minutes.
  5. Reduce the heat to low and add the Velveeta cheese cubes, stirring until the cheese has melted and the sauce is smooth.
  6. Add the cooked rigatoni pasta to the skillet, stirring to coat the pasta in the cheesy sauce.
