Ingredients

  • 1 box strawberry cake mix (15.25 oz)
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips (optional)
  • Red and pink sprinkles (optional)

White Chocolate Drizzle:

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, combine the strawberry cake mix, softened butter, eggs, and vanilla extract. Mix until a thick dough forms. Fold in white chocolate chips, if desired.
  • Scoop about 1 1/2 tablespoons of dough and roll into balls. Place them on the prepared baking sheets, spaced about 2 inches apart.
  • Gently flatten each dough ball slightly.
  • Bake for 9-11 minutes, or until the edges are set and the centers appear slightly underbaked.
  • Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
  • For the drizzle: Melt the white chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth.
  • Drizzle the melted white chocolate over the cooled cookies. Add sprinkles while the drizzle is still wet.
  • Let the cookies set for 10-15 minutes at room temperature or chill to harden the chocolate.
