This Tuscan Tortellini Pasta Salad is a flavorful dish combining creamy, tangy, and savory elements. With fresh veggies, cheese tortellini, and a tangy dressing, it’s perfect for lunch, dinner, or potlucks.

Ingredients

1 pound refrigerated cheese tortellini

1 cup cherry tomatoes, halved

1/2 cup red onion, thinly sliced

1/2 cup black olives, pitted and sliced

1/4 cup pepperoncini peppers, sliced

1/4 cup fresh basil, chopped

1/4 cup Parmesan cheese, grated

For the dressing:

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic, minced

1/2 teaspoon dried oregano

Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions. Drain and set aside to cool slightly.
  2. While the pasta cooks, prepare the vegetables. Halve the cherry tomatoes, slice the red onion, black olives, and pepperoncini peppers. Chop the fresh basil.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
  4. In a large mixing bowl, combine the cooked tortellini, tomatoes, onion, olives, pepperoncini, and basil.
  5. Drizzle the dressing over the salad and toss to coat everything evenly.
  6. Sprinkle with Parmesan cheese and give it a final toss.
  7. Serve immediately or refrigerate for later. This salad can be enjoyed warm, chilled, or at room temperature.
