A creamy and flavorful Tuscan chicken dish with seared chicken breasts, sun-dried tomatoes, spinach, and a rich cream sauce. It’s an easy-to-make, indulgent meal perfect for busy nights or entertaining guests.

Ingredients

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper, to taste

1 pound boneless skinless chicken breasts (2 large breasts)

1 small onion, finely chopped

3 cloves garlic, minced

½ cup sun-dried tomatoes, drained and chopped

1 teaspoon Italian seasoning, more to taste

1 cup heavy cream

¼ cup chicken broth, or dry white wine

½ cup Parmesan cheese, grated

1-2 cups baby spinach

Fresh parsley, for garnish

Instructions

  1. Cut the chicken in half lengthwise to create 4 thin pieces.
  2. Season the chicken with salt and pepper on both sides.
  3. In a large skillet, heat olive oil and butter over medium heat. Add the chicken and cook each side until golden brown, and the internal temperature reaches 165°F. Remove the chicken from the skillet and set aside.
  4. In the same skillet, sauté the onion until translucent. Add the garlic and cook for another minute.
  5. Add the sun-dried tomatoes and Italian seasoning. Stir to combine.
  6. Slowly whisk in the chicken broth, followed by the heavy cream and Parmesan cheese. Bring the sauce to a simmer and cook for a few minutes to thicken. Season with salt and pepper to taste.
  7. Add the spinach and let it wilt.
  8. Return the cooked chicken to the skillet and spoon the sauce over the top.
  9. Serve hot, garnished with fresh parsley or basil if desired.

Notes

  • For a thicker sauce, add 1-2 teaspoons of cornstarch or flour while the sauce is simmering.
  • Substitute spinach with kale or arugula for a different flavor.
  • This dish pairs wonderfully with pasta, mashed potatoes, or roasted vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • You can freeze the cooked chicken and sauce for up to 2-3 months.
