Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (4 oz) diced green chilies
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet with the beef and cook until softened, about 3-4 minutes.
  3. Transfer the beef and onion mixture to the crockpot.
  4. Add the kidney beans, black beans, diced tomatoes, tomato paste, green chilies, and beef broth to the crockpot.
  5. Stir in the chili powder, cumin, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  6. Cover and cook on low for 6-8 hours, or until the chili is thick and the flavors have melded together. Stir occasionally if possible.
