Ingredients

1 lb ground beef

1 tablespoon butter

1 onion, chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

4 cups chicken broth

4 cups diced potatoes (preferably gold potatoes)

1 cup milk

1 cup heavy cream

Salt and pepper to taste

1/2 teaspoon ancho chili powder

Optional toppings: shredded cheese, sour cream, chopped chives

Instructions

  • Cook the Beef: In a large pot over medium heat, brown the ground beef until fully cooked. Remove the beef from the pot, leaving the drippings behind.

  • Sauté the Aromatics: Add butter to the drippings. Once melted, sauté the chopped onion until translucent, then add garlic and cook until fragrant.

  • Make the Roux: Sprinkle flour over the onions and garlic, stirring until it’s fully absorbed.

  • Add Liquids and Potatoes: Gradually pour in the chicken broth while stirring to prevent lumps. Add diced potatoes, milk, heavy cream, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer until potatoes are tender.

  • Blend the Soup: Using an immersion blender, puree about half of the soup for a creamy texture while keeping some potato chunks for texture.

  • Season and Serve: Stir in ancho chili powder. Taste and adjust seasoning as needed. Serve hot with the cooked beef and any desired toppings.

Notes

  • Vegetarian Option: Omit the beef and use vegetable broth for a lighter version.

  • Spicy Kick: Add diced jalapeños or a pinch of cayenne for extra heat.

  • Loaded Potato Soup: Top with shredded cheddar, sour cream, and green onions for a loaded baked potato twist.

  • Thicker Soup: Mash more potatoes or add a slurry of cornstarch and water to thicken.
