Fudgy, chewy brookies combining the rich texture of brownies with the soft chewiness of cookies for a decadent chocolate treat.

Ingredients

100g dark chocolate

50g chocolate chips (optional)

120g plain flour

50g demerara sugar

50g caster sugar

120g butter (salted or unsalted)

25g cocoa powder

2 large eggs

Instructions

  1. Melt the butter and dark chocolate together in a small saucepan over low heat, stirring continuously until smooth.
  2. In a separate bowl, whisk the eggs and both sugars until very pale and fluffy.
  3. In another bowl, whisk the cocoa powder and plain flour together to ensure even distribution without lumps.
  4. Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to prevent the eggs from scrambling.
  5. Fold in the flour-cocoa mix and chocolate chips (if using) until the batter is thick and slightly gooey.
  6. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Drop tablespoons of batter onto the tray, spaced well apart.
  8. Bake in the preheated oven for 12-14 minutes, until brookies are soft but set with slightly firmer edges.
  9. Allow to cool slightly on the baking tray and optionally sprinkle with sea salt while still warm.

Notes

  • For a nutty twist, add chopped walnuts or pecans to the batter.
  • Try double chocolate by adding white chocolate chips alongside dark chocolate.
  • To make vegan, substitute butter with plant-based alternative and eggs with flax eggs.
  • Store brookies in an airtight container at room temperature for up to 3 days.
  • Freeze in a single layer and store in freezer-safe container for up to 3 months.
  • Reheat frozen brookies in oven at 160°C (320°F) for 5-7 minutes.
  • Adjust baking time slightly to achieve preferred fudginess or chewiness.
