This Best Easy Chicken Alfredo Lasagna is a creamy, savory twist on traditional lasagna, featuring tender chicken, rich Alfredo sauce, and gooey cheese, making it a perfect comfort food for family dinners or meal prep.

Ingredients

9 lasagna noodles

2 tbsp olive oil

2 lbs chicken breast, cooked and shredded

1 jar (15 oz) Alfredo sauce

2 cups shredded mozzarella cheese

1 ½ cups ricotta cheese

1 ½ cups grated Parmesan cheese

1 egg

1 tsp garlic powder

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a mixing bowl, combine the ricotta cheese, egg, garlic powder, oregano, and a pinch of salt and pepper. Mix until smooth and set aside.
  4. In a separate bowl, combine the shredded chicken and Alfredo sauce. Stir until the chicken is well coated.
  5. Begin assembling the lasagna: Spread a thin layer of the Alfredo chicken mixture on the bottom of the baking dish. Place a layer of cooked lasagna noodles on top.
  6. Spread half of the ricotta mixture over the noodles, followed by half of the chicken Alfredo mixture, and then sprinkle with a layer of mozzarella and Parmesan cheese.
  7. Repeat the layers with the remaining ingredients: noodles, ricotta mixture, chicken Alfredo mixture, and cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  9. Let the lasagna sit for 10 minutes before slicing. Garnish with fresh parsley if desired.

Notes

  • For a lighter version, you can substitute ricotta cheese with cottage cheese.
  • Feel free to add vegetables such as spinach, mushrooms, or bell peppers to the chicken Alfredo mixture for extra flavor.
  • If you're making this in advance, increase the baking time by 10 minutes if the lasagna is cold from the fridge.
  • This lasagna can be made gluten-free by using gluten-free lasagna noodles.
