A flavorful and versatile chicken marinade made with pantry staples like balsamic vinegar, soy sauce, and Dijon mustard, perfect for grilling or baking to ensure juicy, tender chicken every time.

Ingredients

1/3 cup extra virgin olive oil

1/4 cup balsamic vinegar

1/4 cup low sodium soy sauce

2 tablespoons Worcestershire sauce

2 tablespoons fresh lemon juice

2 tablespoons brown sugar

1 teaspoon dried rosemary

1 tablespoon Dijon mustard or spicy brown mustard

1/2 teaspoon salt

1/2 teaspoon ground black pepper

Instructions

  1. In a medium bowl, whisk together olive oil, balsamic vinegar, soy sauce, Worcestershire sauce, lemon juice, brown sugar, dried rosemary, mustard, salt, and pepper.
  2. Place chicken in a resealable plastic bag or shallow dish and pour the marinade over it, ensuring all pieces are coated. Seal or cover and refrigerate for at least 30 minutes or up to 8 hours.
  3. To grill: Preheat grill to medium-high. Remove chicken from marinade and grill 6-8 minutes per side until internal temperature reaches 165°F (74°C).
  4. To bake: Preheat oven to 400°F (200°C). Place marinated chicken in a baking dish and bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before serving.

  • For added flavor, marinate for the full 8 hours.
  • Use fresh herbs for a more aromatic twist.
