Ingredients

1 lb ground beef (use 80/20 for best flavor)

1 lb smoked sausage (such as kielbasa)

2 cups diced potatoes (Russet or Yukon Gold)

1 can (15 oz) sweet corn, drained

1 can (14.5 oz) stewed tomatoes

1 can (4 oz) green chiles, diced

1 tbsp chili powder

1 tbsp cumin

1 tsp paprika

1 tsp garlic powder

Salt and pepper, to taste

4 cups beef broth (or chicken broth for a lighter option)

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the smoked sausage to the pot and cook until browned, breaking it apart into smaller pieces as it cooks.
  3. Stir in the diced potatoes, corn, stewed tomatoes, and green chiles.
  4. Season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well to combine.
  5. Pour in the beef broth, ensuring that the ingredients are covered. Bring to a boil.
  6. Reduce heat to low and let the stew simmer for 45 minutes, stirring occasionally, until the potatoes are tender.
  7. Taste and adjust seasoning if needed before serving.
