This Easy Teriyaki Chicken Bowl is a quick, delicious, and family-friendly dish featuring tender chicken in a savory-sweet homemade teriyaki sauce, served over rice and topped with fresh vegetables.

Ingredients

2 lbs boneless skinless chicken thighs (or breasts)

2 tablespoons olive oil

1 cup soy sauce

1/2 cup honey

1/4 cup rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon cornstarch

1/4 cup water

4 cups cooked white or brown rice

1 cup steamed broccoli (or other preferred veggies)

1/4 cup sliced green onions

1 tablespoon sesame seeds (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook for 6-7 minutes per side until browned and fully cooked. Remove from the pan and set aside.
  2. In the same pan, add soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Stir to combine and bring to a simmer.
  3. In a small bowl, mix cornstarch with water until smooth. Add the cornstarch mixture to the pan and stir until the sauce thickens (about 2 minutes).
  4. Slice the cooked chicken into bite-sized pieces and return it to the pan with the teriyaki sauce. Toss the chicken in the sauce to coat evenly, cooking for another 2-3 minutes.
  5. Serve the teriyaki chicken over cooked rice and top with steamed broccoli, green onions, and sesame seeds if using.
