Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30–32 oz) bag frozen tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups milk

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the sausage over medium heat until browned and crumbled. Drain excess fat.
  3. In a large bowl, combine the cooked sausage with the frozen tater tots and both cheeses. Toss to mix evenly.
  4. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  5. In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder. Pour this egg mixture over the tater tot and sausage mixture in the baking dish.
  6. Bake uncovered for 60–70 minutes, or until the eggs are set and the top is lightly golden.
  7. Let the casserole cool for a few minutes before slicing and serving.
