Strawberry Lemon Blondies are a chewy, citrus-infused dessert bar that blends fresh strawberries and lemon zest for a bright, sweet-tart treat topped with a fruity glaze.

Ingredients

1 cup (2 sticks) salted butter, softened

1 cup granulated white sugar

1 large egg

3 tablespoons lemon juice (about 1 large lemon)

1 tablespoon lemon zest

2⅓ cups all-purpose flour, spooned and leveled

¼ teaspoon baking soda

1¼ cups diced fresh strawberries

1½ cups powdered sugar

2 tablespoons lemon juice (about 1 medium lemon)

1 tablespoon strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until creamy and combined (about 30 seconds).
  3. Add the egg, lemon juice, and lemon zest. Beat until fully incorporated.
  4. Mix in the flour and baking soda until just combined—do not overmix.
  5. Gently fold in the diced strawberries. The batter will be thick.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 45–50 minutes, or until a toothpick inserted 1 inch from the edge comes out clean.
  8. While the blondies bake, whisk together the powdered sugar, lemon juice, and strawberry jam to make the glaze.
  9. Let the blondies cool completely in the pan before pouring the glaze over the top.
  10. Allow the glaze to set for about 10 minutes before slicing into squares and serving.
