Ingredients

1 cup dried rhubarb, chopped

1 cup unsweetened shredded coconut

1/2 cup oats

1/4 cup honey or maple syrup

1/4 cup almond butter or peanut butter

1 tsp vanilla extract

1/4 tsp ground cinnamon

A pinch of salt

Instructions

  1. In a food processor, combine the dried rhubarb, shredded coconut, oats, honey (or maple syrup), almond butter (or peanut butter), vanilla extract, ground cinnamon, and salt.
  2. Pulse the ingredients until they come together and form a sticky mixture.
  3. If the mixture is too dry, add a tablespoon of water at a time until it sticks together when pressed.
  4. Once the mixture is well combined, scoop out tablespoon-sized portions and roll them into balls.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to allow the energy balls to firm up.
  7. Store in an airtight container in the fridge for up to a week.
