Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheese
  • Fresh parsley (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut off the tops of the bell peppers and remove seeds and membranes.
  • Sauté onion and garlic in a skillet over medium heat until softened.
  • Add ground meat to the skillet and cook until browned. Stir in rice, diced tomatoes, oregano, paprika, salt, and pepper. Cook for a few more minutes to combine.
  • Stuff each pepper with the meat and rice mixture.
  • Top with shredded cheese.
  • Place in a baking dish, cover with foil, and bake for 25 minutes.
  • Remove foil and bake uncovered for an additional 10-15 minutes until peppers are tender and cheese is melted.
  • Garnish with parsley before serving.
