1 box of strawberry cake mix
½ cup salted butter, melted
1 large egg, room temperature
1 tsp vanilla extract
4 oz cream cheese, room temperature
1 cup white chocolate chips
½ cup M&Ms (optional)
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix together the melted butter, egg, vanilla extract, and cream cheese until smooth.
Gradually add the strawberry cake mix, half at a time, mixing well after each addition.
Stir in the white chocolate chips and M&Ms by hand.
Refrigerate the dough for at least 1 hour (optional).
Roll the dough into 1-inch balls and place them on the prepared baking sheet.
Bake for 9–10 minutes, until the edges are set and the centers are soft.
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Add-ins: You can substitute the M&Ms with chocolate chips, sprinkles, or chopped dried strawberries.
Storage: Store cookies in an airtight container at room temperature for 4-5 days or freeze for up to 3 months.
Chilling time: Refrigerating the dough is optional, but it helps the cookies hold their shape better while baking.
