Drizzled with a balsamic reduction and topped with fresh thyme, it's a delightful appetizer that's quick and easy to prepare. Ideal for any occasion, this versatile recipe is a crowd-pleaser.

Ingredients

  • 1 pound fresh strawberries, washed and diced
  • 12 slices Italian bread
  • 1 tablespoon olive oil
  • 1 cup goat cheese, softened to room temperature
  • ½ cup balsamic vinegar
  • 2 teaspoons fresh thyme leaves, plus more for garnish
  • Salt and freshly ground black pepper, to taste

Instructions

  • Prepare the Balsamic Reduction: In a small skillet, simmer balsamic vinegar over medium-low heat until reduced by half, about 8-10 minutes. Let it cool to room temperature.
  • Toast the Bread: Preheat a grill or grill pan over high heat. Drizzle the bread slices with olive oil and grill until browned, around 3 minutes per side.
  • Prepare the Strawberry Mixture: In a small bowl, combine diced strawberries with fresh thyme. Season with salt and black pepper.
  • Assemble the Bruschetta: Spread a layer of goat cheese on each toasted slice. Top with the strawberry mixture. Drizzle the balsamic reduction over the top and garnish with more thyme leaves.

Notes

  • If you don’t have balsamic vinegar, try using a balsamic glaze instead.
  • For different flavors, substitute the thyme with basil or mint, and experiment with cheeses like ricotta or mascarpone.
  • Add a drizzle of honey or crushed nuts for extra sweetness and texture.
