Ingredients

For the Cheesecake Base:

  • 2 cups fresh strawberries, sliced
  • 1 cup mini marshmallows (optional, for fluffiness)

For the Crunch Topping:

  • 1 cup crushed Golden Oreos or shortbread cookies
  • ½ cup freeze-dried strawberries, crushed
  • 2 tbsp melted butter

Instructions

Step 1: Make the Crunch Topping

  1. In a bowl, mix crushed Oreos, freeze-dried strawberries, and melted butter until well combined.
  2. Spread the mixture on a baking sheet and bake at 350°F (175°C) for 5 minutes for extra crispiness (optional).
  3. Let it cool completely before using.

Step 2: Prepare the Cheesecake Base

  1. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. (Skip this step if using Cool Whip.)
  3. Gently fold the whipped cream (or Cool Whip) into the cream cheese mixture until well combined.

Step 3: Assemble the Salad

  1. Carefully fold in sliced strawberries and mini marshmallows (if using) into the cheesecake mixture.
  2. Just before serving, sprinkle the crunch topping over the salad to maintain the best texture.
