1 1/2 tablespoons cornstarch

3 teaspoons fresh lemon juice

Instructions

  1. Prepare the crust: If using a store-bought graham cracker crust, set it aside. If making your own, combine graham cracker crumbs, sugar, and melted butter, then press the mixture into a pie dish and refrigerate until set.
  2. Make the cream cheese filling: Beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, beating until well combined. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
  3. Assemble the pie: Spread the cream cheese filling evenly into the prepared crust.
  4. Prepare the strawberry topping: In a saucepan, combine 2 cups quartered strawberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring occasionally, until thickened and translucent. Remove from heat and cool slightly.
