Strawberry Basil Chicken is a quick and elegant skillet dish featuring golden-seared chicken breasts coated in a glossy strawberry-balsamic glaze. Fresh basil and optional goat cheese add bright, fresh flavor for a simple yet impressive meal.

Ingredients

1 tablespoon olive oil

2 boneless, skinless chicken breasts

1/2 teaspoon sea salt

1/4 cup strawberry jam

1 tablespoon good quality balsamic vinegar

1 tablespoon water (extra if mixture is too thick)

1/4 cup fresh basil leaves, cut into ribbons or finely chopped

2 tablespoons crumbled goat cheese (optional)

1/4 cup fresh strawberries, sliced (optional)

Instructions

  1. Heat olive oil in a medium skillet over medium-high heat until shimmering.
  2. Pat the chicken breasts dry and season evenly with sea salt. Place in the hot skillet and cook for 4 to 5 minutes on the first side until golden brown. Flip and cook another 4 to 5 minutes until fully cooked through.
  3. In a small bowl, whisk together strawberry jam, balsamic vinegar, and water until smooth. Add extra water if needed to slightly thin the glaze.
  4. When the chicken is nearly done, pour the strawberry-balsamic mixture over the chicken. Gently scrape up any browned bits from the pan to incorporate into the sauce.
  5. Reduce heat to low and simmer for 2 to 3 minutes until the sauce thickens and coats the chicken.
  6. Stir in most of the fresh basil, reserving a small amount for garnish, and simmer for 1 additional minute.
  7. Transfer chicken to serving plates and spoon glaze generously over each piece.
  8. Garnish with crumbled goat cheese, sliced strawberries, and remaining basil if desired. Serve immediately.

  • Chicken thighs can be substituted for a juicier result.
  • Raspberry or blackberry jam may be used instead of strawberry jam.
  • Add a pinch of red pepper flakes for subtle heat.
