Ingredients

1/2 lb wide dried rice noodles, prepared according to package instructions

1/2 lb steak, thinly sliced

2 tbsp Shaoxing wine

1 tsp cornstarch

1 tsp soy sauce

8-10 shrimp, tail off and deveined

1.5 cups assorted chopped vegetables (shaved Brussels sprouts, onions, bell peppers, carrots, kale, broccoli florets)

2 tbsp oil (may need more)

1/2 cup chicken broth

3 tbsp soy sauce

2 tbsp brown sugar

1 tbsp oyster sauce

1/2 tsp ginger

1 tsp cornstarch

Optional: chili crisps for heat

Green onions, cut into 1-inch pieces

Instructions

  • Marinate the steak by mixing Shaoxing wine, cornstarch, and soy sauce. Let the steak marinate for at least 20 minutes.

  • In a bowl, prepare the sauce by combining chicken broth, soy sauce, brown sugar, oyster sauce, ginger, and cornstarch.

  • Heat oil in a large skillet or wok over medium-high heat. Cook the steak for about 1 minute on each side, then remove it from the skillet.

  • In the same skillet, add more oil if needed and cook the vegetables until soft, about 4-5 minutes.

  • Add the shrimp and cook until they curl into a C shape.

  • Add the sauce, cooked steak, and noodles. Toss everything together and cook until the sauce thickens.

  • Stir in the green onions and serve hot.

Notes

  • For a different protein option, substitute the steak for chicken or tofu.

  • Add extra vegetables, such as mushrooms or snap peas, for more flavor.

  • To increase heat, consider adding chili flakes or hot sauce.
