Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • ½ cup powdered sugar (for rolling)
  • 1 cup store-bought green icing (or white icing with green food coloring)
  • Gold sprinkles
  • Clover-shaped cookie cutters

Instructions

  • Prepare Dry Ingredients: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  • Cream Butter and Sugar: In a large mixing bowl, beat butter and sugar until light and creamy.
  • Add Wet Ingredients: Mix in the egg, almond extract, and vanilla extract until well combined.
  • Combine Wet and Dry Ingredients: Gradually mix in the dry ingredients until the dough forms. It may be slightly crumbly.
  • Roll Out Dough: Dust a surface with powdered sugar or flour. Roll dough to ¼-inch thickness.
  • Cut Out Cookies: Use clover-shaped cookie cutters to cut the dough. Transfer cookies to the baking sheet using a spatula.
  • Bake: Bake for 7-9 minutes, ensuring the cookies do not brown. Let them cool for 20 minutes on the baking sheet before transferring to a cooling rack.
  • Prepare Icing: Microwave the store-bought green icing in 30-second intervals, stirring until smooth. Let it cool slightly.
  • Decorate Cookies: Frost the cooled cookies and sprinkle with gold sprinkles before the icing sets. Allow icing to dry before storing.

Notes

  • For a smooth icing finish, outline the cookie first, then flood the center with icing, using a toothpick to spread it evenly.
  • Chill the dough for 30 minutes before rolling for better shape retention.
  • Customize flavors by adding lemon or orange zest for a citrusy twist.
