Ingredients

    • ¾ cup buttermilk
    • ½ cup 2% milk
    • 1 large egg
    • 2 tbsp salted butter, melted and cooled
    • Green food coloring (as needed)
  • Toppings:

    • ⅓ cup 2% milk
    • 1 cup powdered sugar
    • Whipped cream
    • 1 cup Lucky Charms cereal

Instructions

  1. Prepare the Pancake Batter:

    • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
    • Add buttermilk, milk, egg, and melted butter, mixing until just combined (some lumps are okay).
    • Stir in green food coloring until you reach the desired shade.
  2. Cook the Pancakes:

    • Heat a griddle or nonstick skillet over medium heat and lightly grease with butter or cooking spray.
    • Pour about ¼ cup of batter onto the hot griddle for each pancake.
    • Cook until bubbles appear on the surface, then flip and cook for another 30-60 seconds.
    • Repeat with the remaining batter.
  3. Make the Sweet Milk Cream:

    • In a small bowl, whisk together ⅓ cup of milk and powdered sugar until smooth.
  4. Assemble the Pancakes:

    • Stack pancakes on a plate, drizzle with sweet milk cream, and top with whipped cream.
    • Sprinkle generously with Lucky Charms cereal.
    • Serve immediately and enjoy!
