This simple and delicious spaghetti with garlic and spinach is the perfect meal when you're craving something flavorful but easy to prepare. The savory garlic and fresh spinach combine with al dente pasta to create a light, satisfying dish that's ideal for a weeknight dinner or a quick lunch.

Ingredients

8 ounces spaghetti

2 tablespoons olive oil

4 cloves garlic, thinly sliced

6 cups fresh spinach

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Freshly grated Parmesan cheese (for serving)

Lemon wedges (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add sliced garlic and sauté for 1–2 minutes, until fragrant and lightly golden. Be careful not to burn the garlic.
  3. Add the spinach and cook for 2–3 minutes, stirring frequently, until wilted. If desired, add red pepper flakes for a bit of heat.
  4. Add the cooked spaghetti to the skillet. Splash in some reserved pasta water to loosen the mixture and help coat the noodles. Season with salt and pepper to taste. Toss everything well to combine.
  5. Plate immediately. Top with freshly grated Parmesan cheese and a squeeze of lemon juice for added brightness.

  • Frozen spinach can be used instead of fresh, but make sure to thaw and drain it well.
  • If you're looking for a vegan version, skip the Parmesan and use nutritional yeast or a plant-based cheese alternative.
