S’mores Brownies combine the nostalgic flavors of classic campfire s’mores with rich, fudgy brownies. Featuring a crunchy graham cracker crust, a decadent chocolate layer, and gooey toasted marshmallows, they are perfect for gatherings or a cozy night in.

Ingredients

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 tsp salt

2 large eggs

1 tsp vanilla extract

2 cups miniature marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. In a food processor, pulse graham crackers into fine crumbs. Mix with melted butter and press evenly into the prepared pan.
  3. In a medium saucepan, melt butter over medium heat. Remove from heat and stir in sugar, cocoa powder, and salt.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Fold in flour until just combined and pour batter over the graham cracker crust, smoothing the top.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Sprinkle miniature marshmallows over the top and return to oven for 5–7 minutes, until marshmallows are golden brown.
  8. Allow to cool completely in the pan on a wire rack. Lift out using parchment paper and cut into squares.

  • Boxed brownie mix can be used as a shortcut.
