Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • ¼ cup sweet paprika
  • 1 tsp caraway seeds
  • 2 tsp dried marjoram
  • 2 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 heaping tbsp all-purpose flour
  • 3 tbsp olive oil
  • 1 large yellow onion, chopped
  • 1 tsp minced garlic (about two cloves)
  • 1 (14-ounce) can fire-roasted diced tomatoes, undrained
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 4 medium carrots, cut into ½-inch pieces
  • 3 medium parsnips, cut into ½-inch pieces
  • 5 oz sweet peppers, chopped
  • Egg noodles, for serving

Instructions

1️⃣ Prepare the Beef: In a large plastic zipper bag, combine paprika, caraway seeds, marjoram, salt, black pepper, and flour. Add the beef cubes, seal, and shake to coat evenly.

2️⃣ Sauté Onions & Garlic: In a skillet over medium heat, cook onions in olive oil for 3-4 minutes until tender. Add garlic and cook for another 30 seconds.

3️⃣ Brown the Beef: Add seasoned beef to the skillet and brown on all sides.

4️⃣ Transfer to Slow Cooker: Move the beef mixture to the slow cooker. Stir in diced tomatoes, beef broth, Worcestershire sauce, carrots, parsnips, and sweet peppers.

5️⃣ Slow Cook: Cover and cook on low for 6-8 hours or high for 4-5 hours until the beef and vegetables are tender.

6️⃣ Serve: Prepare egg noodles according to package instructions. Serve goulash over noodles, garnished with fresh parsley if desired.

  • Add More Veggies: Potatoes or mushrooms can be added for extra texture.
  • Adjust Heat: Use hot paprika or cayenne for a spicier version.
