Ingredients

8 bone-in, skin-on chicken thighs

1 tablespoon olive oil

2 pounds baby red potatoes, halved or quartered

4 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 teaspoon garlic salt

1 teaspoon paprika

½ teaspoon freshly ground black pepper

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with garlic salt, paprika, and black pepper.

  2. Sear the Chicken: In a skillet over medium-high heat, warm the olive oil. Add the chicken thighs, skin-side down, and sear for 2-3 minutes until the skin is golden brown. Flip and sear the other side for an additional 2-3 minutes. Transfer the seared chicken to a plate.

  3. Prepare the Potatoes: Place the halved or quartered baby potatoes into the bottom of the slow cooker. Add the minced garlic and toss to combine.

  4. Assemble in the Slow Cooker: Place the seared chicken thighs on top of the potatoes in the slow cooker.

  5. Add Butter: Dot the chicken and potatoes with small pieces of unsalted butter.

  6. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.

  7. Finish the Dish: Sprinkle the freshly grated Parmesan cheese over the chicken and potatoes. Cover and let it sit for 5-10 minutes until the cheese melts.

  8. Serve: Garnish with chopped fresh parsley before serving.
