Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, chopped

4 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon dried basil

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

3 cups potatoes, diced (or your preferred root vegetable)

1 cup carrots, sliced

1/2 cup chopped fresh parsley

Instructions

  1. In a skillet over medium heat, add the olive oil. Season the chicken breasts with salt and pepper, then cook them for 3-4 minutes per side until golden brown. Remove from heat and set aside.
  2. Place the chopped onion and garlic in the bottom of the slow cooker. Add the chicken breasts on top.
  3. Pour the chicken broth and heavy cream into the slow cooker. Sprinkle in the dried basil, thyme, salt, pepper, and red pepper flakes if using.
  4. Add the diced potatoes and carrots around the chicken.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  6. Shred the chicken directly in the slow cooker using two forks, and stir to combine the stew.
  7. Stir in the grated Parmesan cheese and chopped parsley, and let it melt into the stew for a creamy finish.
